This training manual has been designed to provide basic knowledge and skills required by food handlers as per the provisions of the above cited legislation. A food handler is anyone who works in a food business and who either handles food or surfaces that are likely to come in contact with food (e.g. tables, fridges or chopping boards, cutlery, plates). It covers staff who manufacture, process, prepare, serve, deliver, transport or package food in food establishments. Food safety means making sure that food is safe to eat while food hygiene means keeping the food premises and equipment clean. Ensuring that the food handlers have the right food safety skills and knowledge will not only fulfill the legal requirements, but will also ensure consumer confidence and make food business secure and profitable.

The Southern Nevada Health District’s food regulations focus on the control of foodborne illness risk factors in food establishments. Control of the five risk factors will help prevent food borneillness. The Person in Charge of a restaurant must be knowledgeable about the risk factors in or der to train food handlers and ensure food safety practices are followed.

Over 20 million United States and Canadian frontline food workers grow, process, distribute, cook, and serve the food that is eaten by over 355 million consumers every day. They are the vital link of a complex food system from farm to fork. And every day, each of the 20 million food workers makes individual decisions that impact food safety, workplace safety, product quality, and operations.
Despite the food worker’s importance to the food industry and consumers, there is limited research to understand the food worker’s motivations, attitudes, and perceptions about their workplace. What do they think about their employer, food safety, workplace safety, training, and job satisfaction?
In order to gain insights into food worker perceptions and behaviors, the Center for Research and Public Policy (CRPP)conducted an independent online survey among 1,203 food workers across the entire food system. Additionally, CRPP surveyed 79 food industry leaders to identify any perception gaps between frontline workers and corporate leadership. The study was commissioned by Alchemy Systems.
Job Satisfaction and Employer Affinity
